Ingredients

Chicken and soup base
  • 1.5 lb chicken breasts boneless skinless, added raw
  • 1 can (15 oz) black beans drained
  • 1 can (15 oz) corn drained
  • 1 can (10 oz) Rotel tomatoes
  • 1 can (14 oz) diced tomatoes
  • 1 packet (1 oz) taco seasoning
  • 1 packet (1 oz) ranch dressing mix
  • 4 cup chicken broth
  • 8 oz cream cheese cubed
Creamy finish and toppings
  • 0.5 cup heavy cream added at end
  • 0.25 cup shredded cheddar for topping
  • 0.25 cup sour cream for topping
  • 2 cup tortilla chips for serving
  • 0.5 tsp jalapeños for topping
  • 2 tbsp cilantro for topping

Equipment

  • 1 Dutch oven

Method

Build the soup in the slow cooker
  1. Add raw chicken breasts, black beans, corn, Rotel tomatoes, diced tomatoes, taco seasoning, ranch dressing mix, chicken broth, and cream cheese cubes to the Crockpot. Stir everything except the chicken, so the chicken stays mostly intact.
Slow-cook until the chicken is tender
  1. Cook on Low for 6-8 hours, or High for 3-4 hours, until the chicken is fully cooked and easily shreds. Visual cue: the broth should look lightly thickened from the melted cream cheese.
Shred and re-incorporate the cream
  1. Remove the chicken and shred it with two forks, then return the shredded chicken to the soup. Visual cue: the soup will look more uniform with chicken strands suspended throughout.
Finish with heavy cream
  1. Stir until the cream cheese is completely melted and incorporated, then stir in the heavy cream. Visual cue: the broth turns smoother and creamy with a consistent swirl-like color.
Season and serve
  1. Season with salt and pepper, then serve with shredded cheddar, sour cream, tortilla chips, jalapeños, and cilantro. Visual cue: toppings should sit on top so each bite gets a fresh crunch and tang.

Notes

For the cleanest shredding, let the chicken rest in the opened pot for 5 minutes before shredding so it doesn’t tear apart too finely. Refrigerate leftovers in an airtight container up to 4 days; reheat gently on the stove or microwave, adding a splash of broth if it thickens. Freeze is not recommended because the cream finish can change texture after thawing. For a lighter option, use reduced-fat cream cheese and half-and-half instead of heavy cream.
