Ingredients

Chicken and aromatics
  • 1.5 lb chicken breast Cooked and shredded
  • 3 carrots Sliced
  • 3 celery Sliced
  • 1 onion Diced
  • 3 garlic Minced
  • 6 cup chicken broth
  • 1 packet (1 oz) ranch seasoning mix
Creamy cheddar base
  • 1 cup heavy cream
  • 8 oz cream cheese Softened
  • 2 cup shredded sharp cheddar
Noodles and toppings
  • 8 oz egg noodles
  • 8 strips bacon Cooked and crumbled
  • 1 green onions For garnish
  • 0.25 salt To taste
  • 0.25 pepper To taste

Equipment

  • 1 Dutch oven

Method

Sauté the vegetables
  1. Heat bacon drippings or butter in a Dutch oven and sauté onion, carrots, and celery for 5 minutes until softened and fragrant. Stir occasionally and keep the heat at medium for even cooking.
  2. Add the minced garlic and cook for 1 minute until fragrant, then stir to prevent burning.
Simmer the soup
  1. Pour in the chicken broth and stir in the ranch seasoning mix, then bring the mixture to a boil. Once boiling, stir to fully dissolve the seasoning.
  2. Add the egg noodles and cook for 5 minutes, stirring occasionally so they don’t stick. The noodles should be tender but not mushy.
  3. Stir in the shredded chicken and most of the crumbled bacon, then reduce the heat to keep the soup gently warm.
Make it creamy and finish
  1. Lower the heat and stir in the softened cream cheese until melted and smooth, scraping the bottom and sides as needed. Use a steady, gentle heat so the dairy stays silky.
  2. Stir in the heavy cream and shredded cheddar until smooth and fully melted. Continue stirring until the broth looks creamy and uniform.
  3. Season with salt and pepper to taste, then serve topped with the remaining bacon and green onions.

Notes

For the smoothest broth, keep the soup at a gentle heat when melting the cream cheese and cheddar (avoid a hard boil). Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat gently on the stove, adding a splash of broth if needed. Freezing is not recommended because the noodles and dairy can change texture. For a lighter swap, use half-and-half in place of heavy cream and choose reduced-fat cream cheese.
