Slow Cooker Garlic Butter Beef Bites With Potatoes

Slow Cooker Garlic Butter Beef Bites with Potatoes are tender 1.5-inch beef cubes cooked low until melt-in-your-mouth, with baby potatoes in a rich garlic butter sauce. The sauce forms from butter, garlic, beef broth, and Worcestershire, then finishes with gentle stirring for glossy coating.

Baby potatoes
  • 1.5 lb baby potatoes Halved.
Garlic
  • 6 garlic Minced (about 6 cloves).
Unsalted butter
  • 0.5 cup unsalted butter Cubed.
Beef broth
  • 1 cup beef broth
Worcestershire sauce
  • 1 tbsp Worcestershire sauce
Italian seasoning
  • 1 tsp Italian seasoning
Garlic powder
  • 1 tsp garlic powder
Onion powder
  • 1 tsp onion powder
Smoked paprika
  • 0.5 tsp smoked paprika
Fresh parsley
  • fresh parsley For serving (chopped).
Parmesan
  • parmesan For serving (grated).
Salt and pepper
  • salt and pepper To taste.

Equipment

  • 1 Dutch oven

Method

Season and layer
  1. Season the beef cubes with salt, pepper, garlic powder, onion powder, and smoked paprika, so every piece looks evenly coated. Visual cue: spices should cling to the surfaces of the beef cubes.
  2. Place the baby potatoes in the bottom of the Crockpot and nestle the seasoned beef on top. Visual cue: potatoes should be visible at the base before the beef is added.
  3. Scatter the minced garlic and cubed butter over everything. Visual cue: small butter cubes should be dotted across the top.
  4. Pour the beef broth and Worcestershire around the sides, then sprinkle the Italian seasoning over the top. Visual cue: broth should reach the potatoes but not flood the entire surface.
Slow cook
  1. Cook on Low for 6-8 hours, or on High for 3-4 hours, until the beef is tender. Visual cue: the beef should easily give when prodded with a spoon.
Finish and serve
  1. Stir gently to coat everything in the garlic butter sauce. Visual cue: potatoes and beef should look glossy and evenly coated.
  2. Serve with fresh parsley and parmesan. Visual cue: parsley flecks and parmesan snow should sit on top of the saucy beef bites.

Notes

Pro tip: avoid aggressive stirring during cooking so the beef stays in 1.5-inch bite pieces while the butter-and-garlic sauce thickens around the potatoes. Refrigerate leftovers up to 3-4 days in a sealed container; freeze up to 2 months for best texture. For a lighter option, use low-sodium beef broth and reduce butter slightly to 1/3 cup (the flavor will be milder but still rich).
